The Great Recipe Swap
Now more than ever Newport residents are cooking in their kitchens. We're breaking out the spices we've never opened, we're greasing our bread pans and we're scouring the internet for new recipes that'll tickle our taste buds. While we are doing this, we're separated from our neighbors by our apartment walls and buildings. We're no longer saying hello to the cashier at Bwe Kafe when we get our coffee. We aren't seeing the familiar face on the PATH train platform before we head to work. Or, we're an essential worker, working tirelessly to keep us all healthy and safe.
But what we all have in common, what we all find soothing during times like this, is a tasty plate of food made with care. So why not bring the Newport community together by sharing what brings us comfort - meal recipes!
We are asking Newport residents to share their favorite recipes, either from their great grandma or simply one they found on a blog, with one another on social media. Simply tag your post on Facebook, Instagram or Twitter with the hashtag #NewportRecipes. We'll share what you post on our social media channels, as well as regularly update this page with new recipes (So bookmark the page for your ease!).

Red Thai Curry from @pslifelogged
Recipe:
• Stir fry meat(chicken/shrimps) in oil.
• Add chopped onions, green bell pepper, red pepper, broccoli, beans and sauté in the same oil. Don’t forget to add salt.
• Add red thai curry paste and continue to sauté it.
• Once the veggies and meat are half cooked, add coconut milk to make it creamy. Cook it for 20 minutes. • Serve immediately with rice.
• Garnish it with some mint, cilantro and lemon.

BlackBerry Raspberry Granita•🍇🍦 It’s #friyay !!! Friday nights are generally reeves for going out and exploring the city that has a myriad of options to choose from! I was in the mood for dessert (blame my sweet tooth!) but in zero mood to move out of my lovely couch.
Lo and behold- Harsh ended up surprising me with this awesome Italian desert - Granita!
This easy recipe is made using Black Currant Wine - known as cremè de cassis. You can also use any dark red wine in replacement. 🍾
To start, pour 2 cups of wine in a pan and heat it on a low flame for 5-7 minutes. Cool it to room temperature and once done, keep it in the refrigerator. 🍇
Next, take 2 small cups raspberries and blackberries each. Purée it in a mixer with sugar and lemon juice. Strain the purée to remove any seeds or solids. Next, mix this with the wine and put it in the freezer.
Keep this for about 30 minutes and the edges will begin to set. Every 20-30 minutes, ensure that the frozen pieces are scraped off (IMP step) to ensure the consistency resembles that of shaved ice snow cones. Desert will be ready in 3-4 hours.

Oil Free Pakodas from @amrapaliak
These super yummy oil free pakodas are now my fav evening snack ☺️ The below makes 35-40 bite sized pakodas. View the “Moong Pakode” highlights to see the process 😁
Soak 1 cup of split moong daal (yellow lentil) in hot water for 20 mins.
Coarse grind it with salt and add the below -
1 tsp cumin
1 tsp paprika
1 tsp minced green chillies
1 tsp coarse coriander seeds
1 tbsp grated ginger
1 tbsp fennel seeds
1 medium onion chopped
Mix it all and toss it in the airfryer with a parchment paper at 375° for 8 mins. Remove the parchment paper and flip over the pakodas and toss it back in the air fryer for another 10 mins at 375°
Pair it with mint chutney or some hot soup or Rasam ☺️

Chicken White Pasta from @pslifelogged
🌀Boil raw pasta according to the instructions given on the package.
🌀Melt butter in a medium sauce pan, add garlic.🧄
🌀Add flour and cook for an additional minute, stirring constantly.🥣
🌀Add milk and broth, stirring constantly. Cook until sauce boils and thickens. 🥄
🌀Add parsley and parmesan cheese. Add desired salt and pepper. Continue stirring until cheese has melted.
🌀On the other side stir fry veggies on medium heat🔥
🌀Add chicken as a protein if required.🍗
🌀Mix pasta with veggies 🥦🥕🧅🥬
🌀Pour sauce over pasta and serve.🍝
Oats Banana Peanut Butter Granola Bar from @aditimohan27
Mush 1 ripe banana, 1/4th cup peanut butter, tablespoon of flaxseed, 2 tablespoons of honey, 1/2 cup any milk of your choice, wip it all up, dry ingredients 2 cups of oats, dash of cinnamon, 1 tsp of baking powder, 1 tsp of salt. Add the wet ingredients, mix it all up and bake everything on 375 for 35 mins. When it comes out of the oven drizzle with honey, peanut butter and banana ❤
